Healthy Pasta Primavera

In this 8 Minute Meal segment for Good Morning CT, I make a healthy pasta primavera.

 
 

Ingredients:

  • 3 Tbsp olive oil

  • 1/3 cup of each: Sliced bell pepper, sliced carrots, halved cherry tomatoes, cut zucchini and yellow squash, and red onion

  • 1 cup drained and rinsed canned chick peas

  • 1 pack Barilla 60 Second Microwave pasta or 2 cups boiled pasta of choice

  • 1.5 tbsp lemon juice

  • 1/2 tbsp garlic powder

  • 1/2 tbsp dry Italian seasoning

  • 1/3 – 1/2 cup shredded Parmesan cheese

Directions:

1. Wash and cut all vegetables and set aside.

2. Heat 3 tbsp olive oil in a pan over medium heat for 5 minutes.

3. Add in onion and carrots and cook for 2 minuted. Then add in bell pepper strips, zucchini and squash and cook another 2 minutes. When add cherry tomatoes and chick peas. Cook for another 2-4 minutes.

4. Cook pasta according to package instructions so that it is ready to toss into pan with vegetables once they are done cooking.

5. Dress pasta and vegetable mixture with lemon juice, Italian seasoning, garlic powder and cheese. 

6. Toss mixture gently so the cheese melts. Serve hot. Makes 2 servings.
